Kale Yeah!

Here is a must try pesto recipe.  It is delicious on bread, crackers, cheese, grilled mushrooms, dirty underwear, shoes....it will pretty much make everything taste better.  Please try this one...you will be SO happy you did.

Here's what you need:
1 bunch of kale
1/2 cup toasted almonds
3 cloves of garlic
1/4 cup of freshly grated Parmesan
1/4 - 1/2 cup of olive oil (use the good stuff)
The juice of 1/2 lemon
Salt & Pepper



Here's what to do:
Heat up a skillet on medium heat.  Add in the almonds and keep tossing them around to lightly toast them.  Get out your food processor.  Add in 1/2 of the kale, the almonds, the garlic, the Parmesan, the lemon juice from 1/2 of a lemon, and the olive oil.  Chop those babies up until it looks like this:


Add in Salt and Pepper to taste.  Serve it on whatever you like.

Okay, funny story. First let me say, I loved the kale pesto. We put it on pasta with red peppers and asparagus. Yum! Now the funny part. I first juiced half a lemon but then thought I had misread the directions so I tossed the other half lemon, rind and all, into the food processor. Then realized I was right the first time. Oops. Oh well, it was still great even if a bit lemony. We will have it again, for sure, minus the rind.

Haha! That's hilarious! I guess I'm not the best at recipe instructions! I'll change that to the JUICE of 1/2 a lemon! I'm glad it turned out well though! A little extra lemon probably gave it a really fresh taste! Glad you enjoyed!
